Frito Pie

A few nights ago, I got hit with a MASSIVE craving for Sonic. Now, I'm already a little miffed at Sonic for getting rid of one of my favorite menu items, the Country-Fried Steak sandwich, so I was EXTRA displeased when I realized that the Frito Pie was no longer on the menu, having been replaced by a Fritos Chili Cheese WRAP


Frito Pies are nothing fancy; basically it's a pile of chili, glopped on top of Fritos corn chips, then topped with shredded cheese and diced onions. Extra popular in the Midwest (anyone recall the "King of the Hill" episode where Peggy made Frito Pie?) and at state fairs, Frito Pies are sometimes served INSIDE the chip bag as a "walking taco" or "taco in a bag".

Easy enough, right? Instead of making my usual chili, which takes HOURS, I made a quick and easy chili, so I could enjoy my Frito Pie in under an hour.


Plus, if you're ever stranded in the wilderness and need to start a fire, you can light your Fritos on fire!


Frito Pie

Ingredients:
3 lbs ground chuck
2 Tbsp minced garlic
1 12oz can tomato sauce
1 10oz can Ro-Tel diced tomatoes w/ chilies
1/2 tsp salt
1 tsp oregano
1 Tbsp cumin
1 Tbsp chili powder
1 Tbsp ancho chili powder
Warm water
1 14oz can dark kidney beans, drained & rinsed
1 14oz can pinto beans, drained & rinsed
1/4 cup masa or cornmeal
Fritos corn chips
2 cups shredded cheddar cheese
1 white onion, diced
Jalapeno slices
Sour cream

In a cast iron skillet over medium-high heat, brown the ground beef and the garlic.





Drain any excess fat and add the tomato sauce, Ro-Tel, salt, oregano, cumin and chili powders. Stir in 1/2 cup of water, then cover and simmer over low heat for 30 minutes.





Add the beans, stir to combine, then cover and simmer for 20 minutes.




Combine the masa and 1/2 cup water. Add to the chili, stir to combine, then simmer for 10-15 minutes.






Serve chili atop Fritos corn chips and top with shredded cheddar and diced onion. Add sour cream and jalapeno slices if desired.
