Chocolate Chip Cookie Cheesecake Bars

Admit it, the title got your attention, right? Chocolate chip cookies? AND cheesecake? TELL ME MORE!

A layer of creamy cheesecake, sandwiched in between 2 layers of chewy chocolate chip cookies, this is probably the easiest dessert EVER. You don't need a ton of ingredients, there is hardly any prep work whatsoever, AND it's a perfect dish to make with the kids so they can "help".


I got this recipe from a lady that I used to work with years ago; we had an office ritual of doing a once-monthly potluck to celebrate the birthdays of employees born within that month. She ALWAYS brought this dish, and it was usually gone within minutes. Finally, I asked for the recipe, and she laughed when she told me that it came from a church cookbook and was absurdly easy.

Seriously. This recipe has FOUR ingredients, three of which are items I ALWAYS have on hand. 

I've made this countless times since; I've even cut the bars into small "fudge sized" squares and included them in holiday gift boxes along with my buckeyes, fudge and coconut cherry balls

Chocolate Chip Cookie Cheesecake Bars

Ingredients:
1 8oz package cream cheese, softened
1 egg, room temperature
1/2 cup sugar

*If you can't find the "regular" sized tubes, simply use ONE of the "family" sized tubes and simply split it into two halves. 

Spray a 13x9 baking pan with nonstick spray. Remove the dough from one tube and press firmly along the bottom of the baking dish to form a thin layer. Set aside.



Beat the cream cheese, egg & sugar together with an electric mixer until smooth & creamy. Spread atop the cookie dough layer.




Crumble the remaining tube of cookie dough on top of the cream cheese layer - it's ok if the cream cheese layer isn't covered completely, as the cookies will spread while baking.


Bake in a 350-degree oven for 35 minutes or until the cookies are golden brown and the cheesecake is set and beginning to pull away from the edges.

Cool COMPLETELY on a wire rack before cutting into bars or squares.
