Buckeyes are simply peanut butter balls, ALMOST completely dipped in chocolate, which resemble the nut of the Ohio buckeye tree. Here in the South, we simply dip the balls completely and call them "peanut butter balls" (original, isn't it?).
Simple, easy, and always a crowd-pleaser, I like to make these around the holidays and give them out as gifts.
Buckeyes (Chocolate Peanut Butter Balls)

Ingredients:
2 cups creamy peanut butter
1/2 stick unsalted butter, softened
1 16oz box confectioner's sugar
1 12oz package semisweet chocolate chips
2 Tbsp vegetable shortening
Beat the peanut butter and butter together with an electric mixer until smooth. Add in the powdered sugar, 1 cup at a time, while beating, until mixture is firm but not overly sticky.
Roll into small balls (or be lazy like me and use a scoop). Freeze balls for at least 1 hour or until firm.
Melt the chocolate chips and shortening in a double boiler; dip the peanut butter balls into the chocolate mixture and then chill until firm.
