Strawberry Pecan "Fudge"

Every so often, I come across recipes that just seem TOO good to be true. Too easy, or too delicious. Honestly, I've had a few recipes SERIOUSLY let me down. 

This one though? This is INSANE. It's a delicious strawberry "fudge", studded with pecans, and it only takes THREE ingredients, and hardly any cooking at all. No candy thermometer or beating with wooden spoons - just melt, mix and chill. 


This is PERFECT for Easter, especially if you need a quick and easy dessert option - you could probably even cut the fudge into small pieces for inside Easter eggs...

Strawberry Pecan "Fudge"

Ingredients:
1 12oz bag white chocolate chips
1 16oz can strawberry cake frosting
2/3 cup coarsely chopped pecans


Lightly coat a 9x9" pan with cooking spray. You can also line the pan with wax paper, leaving a few inches of overhang to make it easier to lift out the fudge once firm.


Melt the white chocolate chips in either a double boiler or microwave. Stir in the strawberry frosting. 






Stir in the pecans, then spread into the prepared pan and chill for 30 minutes or until firm before cutting into squares.
